虎皮蛋糕卷中虎皮的制作
【材料】1。蛋黄500g、糖200g2。玉米粉100g3。香草水少许
【做法】将1料快速打发后加入2料打匀即可加入3拌匀,倒入模中薄薄的一层。上火250度;下火230度预热十分钟;
进炉后关下火,以上火烤,待上色后起皱后关火(此时才可开炉),待竹笺插入一沾即可(约4分钟)
注意:烤时不可开炉,否则会没有皱纹。此份量为专业烤盘一盘,如果一般家庭烤箱可能要灭半甚至用1/3的量。
核桃蛋糕(小的muffin纸杯可以烤约7…8个)
奶油(butter)60g砂糖50g蛋1个即溶咖啡1小匙热水2小匙核桃20g面粉40gbakingpowder四分之一小匙
另准备装饰用核桃7…8个,各切成两半(每个纸杯放两个切半的核桃)
预先准备:先把奶油和蛋从冰箱取出,使恢复为室温。用手指戳一下奶油,变软即可开始操作。即溶咖啡溶于热水中备用。烤箱预热至350F。
【做法】
1。料理盆内放入奶油,用手提mixer打成乳霜状。然后将砂糖分两次加入,继续搅打至感觉富含空气且发白为止。
2。蛋打散,将蛋汁分成多次(6…7次)加入做法1。的蛋白里继续用mixer搅拌,每次都要确实打匀了才加新的蛋汁,因为一次加太多蛋汁会使油水分离。
都打好之后,再加入溶好的咖啡与切碎的核桃(20g),充分搅拌均匀。(这时出现一点分离现象是正常的)
3。面粉和bakingpowder混合后过筛,倒入并以切菜的方式将面糊搅拌至产生光泽。(只要拌匀就可以了)
4。纸杯排放在烤盘上,每个纸杯底部分别放好切对半的核桃一对,并将面糊舀入纸杯中,约八分满。放入烤箱烤15分钟。以手指轻压蛋糕中央,如果有弹性就表示烤熟了。取出放凉即可。
蛋糕
蛋3个蛋黄1个砂糖40G(偶不喜欢太甜的;原配方85G)低粉55G牛奶5G黄油5G
海绵蛋糕稳定剂(SPONGECAKESTABILIZER);好象也叫SP;是黄色的果酱状的东东CK的ONE4G
【做法】蛋加蛋黄打到湿性发泡;加稳定剂;打到干性发泡;加粉。牛奶黄油隔热溶解;加入打发的蛋。180C;20…25分钟
蜂蜜蛋糕
打鸡蛋:
1。回暖鸡蛋4个,蛋清蛋黄分开;
2。蛋清+1/2tpBP,略打,+糖20g,打至企身;
3。蛋黄+糖30g,打成乳白,+蜂蜜打匀,+4tp油、4tp牛奶(看着差不多就行,别太多了)打匀。
拌面粉:
4。30g面粉筛入蛋黄糊,轻手拌匀;
5。取1/3打好的蛋清,拌入蛋黄糊;
6。把蛋黄糊倒入剩下的蛋清中,拌匀。
烤蛋糕:
7。蛋糕模喷油,倒入蛋糕糊(想做草帽蛋糕就得倒满,否则2/3就行了)
8。烤箱预热300F,烤50分,晾凉了取出即可。
